Any special treatment I have to give it before cooking?
I ask because a little while back I made a hominy/green chile/bacon casserole (with canned hominy) and it was so good I just couldn't get enough of it. But canned hominy just ain't that easy to come by. The frozen variety is available, though, but I'm a little leery.

Jessica Springsteen, the daughter of rock star Bruce Springsteen, has been selected for the Tokyo Olympics show jumping team, the U.S. equestrian team announced Monday.
Springsteen and her 12-year-old stallion, Don Juan van de Donkhoeve, will be part of a four-member squad that also includes McLain Ward, Kent Farrington and Laura Kraut.
The 29-year-old Springsteen was an alternate at the 2012 London Summer Games but failed in her bid to make the 2016 Rio Games.
