Yukon Gold potatoes, white onion, pepper to taste and then simmered in broth until tender. Mash up a bit and add a cut up head of cauliflower and simmer again until the cauliflower is tender. Mash again, leaving some chunks of cauliflower for texture.

I sometimes serve with a bit of cheese on top that can be mixed in to make it even more creamy but it doesn't need this to be good. If you eat meat you might like a bit of bacon crumbled on top as well.
