What's for Dinner ~ Tuesday Dec 4th

It will be homemade eggrolls for Bill.

He makes the most amazing eggrolls! Seasoned ground chicken, ginger & garlic, cabbage, green onions, and carrots - with homemade dipping sauce. It will be after midnight though, and too late for me, so I'll probably have breakfast or Pearitos.

I will get leftover eggrolls for lunch tomorrow though!

1. Not sure, but I hope it includes brussels sprouts ...

tossed with a little olive oil and salt, and oven-roasted, until they are brown and crispy. Delicious.

4. Eggrolls sound great, in fact I have them on my menu for next week

We are having Eggplant slices with tomato and feta cheese, Tabouli and a carrot salad.

6. Mmmm...egg rolls. We are going to have an asian flavored pork loin with

coconut rice.

I am also going to make a salad with apples and this amazing aged gouda I got online. It is a hard cheese with those wonderful little crystals. It does not melt well at all, but grated and mixed with apples, I think it's going to be terrific.

We shall see.

8. LOL. Subway...can't pass this deal up. Got a flyer, 2 subs for $2 each.

One meatball, one cold cut sub.

The outlet near me is great with going with particulars. Lots of cheese on the meatball sub, some onions and bell pepper. Extra sauce and nothing else. White loaf.

Oil and vinegar as a dressing on the cold cut sub (ham), no mayo or such. Lettuce, tomato, bell pepper and whatever else looks good. Wheat loaf.

~ 2-3 meals for $4.

Corned beef hash, eggs over-easy, and rye toast. Now, to bed. Oh, an apple-oatmeal crisp with pecans. Nighty-night!

12. Soup

Yukon Gold potatoes, white onion, pepper to taste and then simmered in broth until tender. Mash up a bit and add a cut up head of cauliflower and simmer again until the cauliflower is tender. Mash again, leaving some chunks of cauliflower for texture.

I sometimes serve with a bit of cheese on top that can be mixed in to make it even more creamy but it doesn't need this to be good. If you eat meat you might like a bit of bacon crumbled on top as well.

13. corned beef/redskin/red onion hash

It's the third meal from this brisket that I simmered on Saturday.

Poached eggs on top, a mustard sauce on the side. With that, a pear and baby spinach salad with crumbled bleu cheese.

I've been making a triple batch of chex mix: the house smells so toasty! Sending a box to the college junior who is spending this year in St. Petersburg Russia. Trying to find some silly American things to tuck in. Cherry pop rocks. Root beer float flavored chewing gum. Dried falafel mix. Taco seasoning. (He paid $15 USD for a burrito the other day -- says Mexican or spicy foods are impossible to obtain).

Sunday, the Christmas baking will ramp up. Last year I made sooooo many batches of cookies and was baking for the family up north who were awaiting preemie twins. I'll be seeing those twin girlies this weekend and making a family dinner. Roasted chickens, I think, with rosemary, garlic, and butter under the skins. Roasted assorted baby potatoes. Haven't decided on sides or salad. Pie and a sherry cake for dessert.
