... and gave it a light dusting of thyme (my first time cooking with thyme -- it
filled the house with a heavenly fragrance). I browned the roast well and then
roasted it at 325 for about an hour. I added the canned tart red cherries (drained --
and NOT pie filling) and fresh apple slices (I peeled the apples -- just personal
preference... either way is fine) and cooked it for another 20-30 minutes..

I saw a similar recipe today that used cinnamon instead of thyme. I'm going to
try that next time.
