Lactose-free lasagne.
I love Italian food but all of those cheeses are a real problem. I have found vegan substitutes for mozzarella that I use on my pizza and for grated Parmesan that I sprinkle on my spaghetti. But lasagne would not be the same without the layer of creamy ricotta cheese.

I tried an experiment using Greek yogurt and it turned out fabulous! I flavored the yogurt with some of my vegan Parmesan, salt and mixed in an egg to hold it together. It works just as well in making baked stuffed shells.

1. I'm glad you found a tasty substitute!
I've seen some tofu versions of ricotta recently, but have never tried any of them.
I can definitely see where a nice greek yogurt would work well in lasagne.

2. Thanks. It has another bonus:
Ricotta cheese - 1 cup = 425 calories

Greek yogurt - 1 cup = 170 calories ;)

4. Silken tofu makes a great ricotta substitute.
Especially if you have some good, sharp Parm/Romano substitute to cut into it. I often mix it with real ricotta to make a lower calorie, lower fat, less expensive filling. The texture is closer to ricotta than is firm tofu, too.

5. I wonder if you can make ricotta with lactose free milk
I don't know the science of it and if the lactose is necessary for curd but ricotta is pretty easy to make at home with just a few ingredients. It's delicious!

I also make a veggie lasagna with just a garlic bechemel that I make with a soy/almond milk blend. It also is delish.
