Pan tomate ( tomato bread)

This is an easy dish from Spain. It is good for using up bread that is getting crusty and using up over ripe tomatoes.

Cut your hard crust French bread in half the long way. You can let it sit out for about an hour so the white part gets crusty. Cut a garlic bulb in half and smear the bread with the garlic. Drizzle some olive oil.(Extra virgin or whatever kind you like). Cut your over ripe tomato in half and smear it on the bread getting a lot of the juice on it. Salt to taste, cut into pieces and eat.

This was originally a stretcher dish for the peasants.
