Risotto add-in suggestions...
So, I'm trying to make foods that our babe can eat with us. He loved the chicken parmesan risotto I made a couple of weeks ago, and it was so easy to make I'd like to make risotto again.

What else can I put in it? Vegetables? Meat? Do I have to separately cook everything?

I have medium and sharp cheddar, a roll of goat cheese, some broccoli, five lbs of carrots, cans and cans of chicken, and three meaty ham hocks. What works?

I just guessed my way through it last time. I sauteed a chopped sweet onion in olive oil, then sauteed rice with it until everything was pretty transparent. Then I added hot chicken stock one cup at a time, stirring frequently. I kept the chicken stock hot in the microwave, and used it as it was absorbed into the rice. I did use canned chicken - my in-laws went shopping for us at a warehouse store on their last visit, so we're stocked with convenience foods.

2. I love mushrooms
But I was hoping to avoid a trip to the store. I'm glad to hear that carrots are okay - they're never my favorite vegetable. I may try carrot and ham hock.

4. try instead of chopping them, grate them!
I have a couple Mouli graters and I'll grate carrots into almost anything now :rofl:

you can use a plain old flat grater too, but I love my Mouli grater

Ingredients for a risotto are any foods that can be chopped small and which are pleasant combinations no matter how they are cooked.

The recipes for risotto are more numerous than the number of cooks in the world, because every cook who's discovered risotto has tried many variations.

Just stay away from strawberry garlic type combos and you can't go wrong.
