Christmas Present: Fresh Venison!
My neighbor dropped off a doe he had just shot with his bow on Christmas morning. This was a great gift this year with higher gas prices, etc. - meat for the freezer! We love venison (I won't kill them myself), but I'll sure as heck eat them. I've cooked a lot of venison, but just wondered if anyone here had any favorite recipes to share.

As an aside, after he dropped the deer off at the end of the driveway near the back door, I yelled at my five kids to come "see what the cat dragged home!" They actually believed me. Priceless.

Deer cubes

Beef can be substituted here for deer. Cube up some filet'd deer meat or beef into 2" x 2" cubes. Butterfly them open halfway. Put a slice of a jalapeno(no seeds)in the opening. Wrap the cube in a half or a whole piece of bacon(I use cheap bacon for this).Toothpick the bacon on it or use a skewer and shiskebob 6 or 7 on the skewer. Marinate 3 or 4 hours in Lawry's herb and garlic marinade. Cook over charcoal. Watch them carefully because the bacon drips and they will take off on you. They cook in about 10 minutes depending on the intensity of your charcoals. Serve over a bed of wild rice. Yummy.

2. Another idea? I've had venison parmesan, but never made it.
It was delish, and probably made like chicken parm is.

3. I've never cooked venison for human consumption, although
my cats raved over the deer ribs I cooked for them one time. Seriously, my hunting aquaintances say that you need to add some extra fat to venison. Folks around here (N. Georgia) usually add pork sausage or mix ground venison with an equal part of ground beef. My new nephew-in-law, Dan'l Boone, braises his ribs or puts them in a BBQ and brushes with lots of marinade. I wonder if brining would work?

i'd marinate usually with a vinegar base and i used lots of BBQ sauce in cooking it

i'm thinking Balsamic would be very good on venison

I have to tell you about my ex bringing home the deer.... we had a brand new house with brand new light grey carpet in the "back/guest" bedrooms/bath

so I wake up one morning, the ex had gotten in late that night, I said "did you get a deer?" he says "yup" I say "where is it?" while looking out the window to the big tree we usually used for draining steers and hogs

"it's in the bathroom" says he. "The bathroom? What bathroom?" "In the back" he says

i go to my brand new pale grey bathroom and he has a dressed and quartered deer SOAKING in my fiberglass tub!!!!

:argh:

any guesses why I divorced the idiot?
