1. I admire your restraint
If I have time I'll be making home made macadamia/coconut brittle and maybe some cashew brittle. I love the stuff....Unfortunately, it doesn't love my teeth.

But Yum!

2. My dad is a peanut brittle
connoisseur. When I first starting driving he would send me up to this candy store to get him a pound. Of course I was mooore than willing to drive 10 miles to pick it up. I spend years looking for something similar & finally found a great site on the web. That was always my fall back gift. He just found out his blood counts are going up. He would be considered pre pre diabetic & has been told to lay off the sugar.

Happy eating!

Thank you for looking, but he's unbelievably particular about peanut brittle. He'd rather go without than eat something that wasn't up to his high standards

If he gets a craving.

Kudos to him, though, and best of luck to all.

He just needs to be careful. Like I posted, he's pre pre diabetic. Being careful does not include eating a pound of peanut brittle.

3. That's impressive
Still have all your fillings?

I'm not a peanut brittle fan, but I once had cashew brittle, and that was mighty fine.

However, yes, you're bad. But you're so good at being bad...........

i don't have a single filling in my mouth (and I have all 4 wisdom teeth in too)

my dentist says it must be genetic as it certainly isn't my stellar record of regular dental visits or pristine eating habits

14. I don't refer to mine as
sagging. At my age I have flat butt, a sight to behold. NOT. The sad thing is I always had a jaylo butt. I can't remember how many times it's been pinched. :sigh: Now I just tell DH to walk in back of me & pick it up off the floor.

22. What a coincidence. I just learned how to make cashew brittle in
the microwave and it is marvelous. The recipe is so simple and after I went to allrecipes.com, it became even easier. It comes out crunchy and kind of honey-combed, so it melts in your mouth and doesn't stick to your teeth. Yum.

27. Okay. You asked for it and don't blame me if you develop
an addiction to this like I have. (I feel like a pusher)

Brittle

1-1/2 cup nuts**
1 cup white sugar
½ cup white corn syrup
pinch salt (optional)
1 tbsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

Grease a baking sheet (one that has sides), and set aside. In a microwave proof glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.

Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. This sets up FAST, so get it out of the bowl and onto the plate as fast as possible. Let cool until set. Break into pieces, and store in an airtight container.

**I prefer raw nuts as they get cooked in the process of making this recipe.

The woman who taught me how to make it has a 700 watt microwave and cooked hers for 10 min. My oven is 1000 and only takes 4 min. She said you would just need to cook it until the nuts are parched. She also uses a recipe that calls for 3 tsp of baking soda, but I like the taste better with less.

29. For the coconut brittle
I use one of those non-stick silicone mats on a cookie sheet. Spread the coconut on the mat (not too thick or it won't set up)

When you're ready to pour the hot brittle for set up pour it directly over the coconut. And then restrain yourself...You really need to wait until it is fully cool.

26. congrats on your great teeth!
last thursday night i was chewing hard on some gummy bears and they pulled a gold crown off my back tooth! that poor tooth. all it did was get chipped 7 years ago and then i needed a crown. anyhow, i went to the dentist yesterday and they just glued the crown back on.

i told the dentist it was a gummy and he said they love gummies and they're great for business. he's a real comedian.

that peanut brittle must be fabulous! the sweet 'n salty combination of flavors is irresistible.
