Vegan Ice Cream Just in Time for Summer!

Lick It! Creamy Dreamy Vegan Ice Creams Your Mouth Will Love

Strawberry-Banana Ice Cream
INGREDIENTS:
3 cups sliced strawberries
2 medium bananas
1 (14-ounce can) full-fat coconut milk
1/2 cup granulated sugar or agave syrup
2 tablespoons freshly squeezed lemon juice

Combine all of the ingredients in a blender and process until smooth. Cover and chill in the refrigerator for at least 2 hours. Then freeze in an ice cream maker according to the manufacturer’s directions.

YIELD: Makes 1 generous quart.
VARIATION: Mango-Banana Ice Cream Replace the strawberries with 3 cups of diced mango.

Gail A. Eisnitz (San Rafael, CA), winner of the Albert Schweitzer Medal for outstanding achievement in animal welfare, is the chief investigator for the Humane Farming Association. Her work has resulted in exposés by ABC’s Good Morning America, PrimeTime Live, and Dateline NBC, and her interviews have been heard on more than 1,000 radio stations. Her work has been featured in such newspapers as The New York Times, Miami Herald, Detroit Free Press, Texas Monthly, Denver Business Journal, Los Angeles Times, and US News & World Report. Eisnitz was the driving force behind a front-page exposé in The Washington Post documenting slaughterhouse atrocities. The Washington Post reporter later described Eisnitz as “the most courageous investigator I’ve ever seen.” The story was one of the highest reader-response pieces ever run by The Washington Post.

Even if you don't read this because you're an animal lover, read it because you love yourself and your family enough not to feed them the filth and disease that comes out of the meat factories. If you can look past the sad eyes of the cow that is being skinned alive, then if nothing else just stop a moment to think about the things that have come into contact with the meat you're eating. This book describes the filth and disease that make it all the way to that meat on your plate. I'm a Registered Dietitian and I had learned to trust the USDA. If there was a USDA certification on my meat label I was safe. My "trusted" USDA now recommends that I cook the meat that I buy to a safe temperature to kill everything that they missed. Why else do you think you can't buy a rare hamburger anymore? It's because it's dirty and diseased and it has to be practically burnt to remove risk of that filth/disease from the factors being passed on to the consumer. ~amazon reviewer

2. Slaughterhouse is a fantastic book, I highly recommend it.

In case anybody's wondering, it's not salaciously gory, not focused on gross-out stuff, and the focus on the interplay between deregulation, exploitation of labor and abuse of animals is very well done.
