I'm making it for dinner tonight, and dammit, it's Veal *parmagiana* NOT

"Veal Parmesan." The reason for this is that the real name of the dish ACTUALLY means "Veal in the manner of Parma," NOT "Veal with Parmesan cheese," which that type of cheese it doesn't contain any of.

It actually uses (not to sound like a food snot, but there are some things you just HAVE to do right) Fontina, which melts much better than even pure Parma-Reggiano.

And PS to the aimal-rights folks: I don't like the way veal is produced any better than you do, and I like animals a lot, and do not approve of the way veal is produced, as I said above. Therefore, I would not actually buy veal. But the Soup Kitchen where Mrs R volunteers had an excess of donated veal, so she brought some home. And I'm even more against the idea of wasting food (because I grew up poor) than I am for animals' rights. So there you go. Flame me if you will, but I'm not about to refuse any free protein.

End of food rant.

3. About 7:30. It can be a nice white or red, we don't care, as long as
it's not too dry. And doesn't have to be expensive; we like Lambrusco even though the Wine Snots consider Lambrusco as being only slightly better than ditch water.

We'll set a place for you; we always have room for one more at the table.

Yeah, I'm one of those weirdo-hippie freak vegehegians - since '89 even. And frankly, I have no idea WHAT the hell "in the manner of Parma" means. Flame, flame, flame - hmm. I KNOW I left one of those around here SOMEWHERE - AAARRHH!! My biscuits are burnin'! My biscuits are burnin'!!

Note to self: Do NOT sit on Zippo while posting.

Oh, and you're totally correct about Fontina - perfect cheese for the dish.

Shit. I wish I could locate it quickly but can't - someone posted an image (cartoon) that said, "MEAT IS MURDER!" and in smaller type said, "quick, eat the evidence".

7. It would indeed work with eggplant, if that's what we had. But I find myself
with veal that has to get used or thrown away.

I have no quarrel with "ethical" or any other kind of vegetarian. We eat several meatless meals per week, as a matter of fact.

But I'm not going to throw perfectly good food away. That would make the poor calf's sacrifice doubly in vain, wouldn't it? (And I'm not being sarcastic here.)

10. No, I agree - if you have it, don't have an ethical issue, and it needs to be used - USE IT!
There's not much worse than an animal being killed for food and then not being used for that purpose. I certainly wouldn't have assumed sarcasm even if you hadn't included the disclaimer. Just don't over cook it - that makes it chewy. Curiously, the opposite is true with eggplant - it becomes slimy.

Shit. That made me think of the scene from "Dances With Wolves" where they find all the skinned bison.

6. i tend to use whatever cheese i have in the house
love fontina though although it is kind of expensive (use it only when i make sausage with carmelized onion pizza for my wife and her friends)

17. Yeah, it was either eat the damn veal or see it get thrown out. And I'm not even
zero percent Italian, but I'm an utter slave to all kinds of Mediterranean food, from Spain around through Morocco (except for the shrimp, because I'm allergic to shellfish).

I could eat nothing but that kind of food for the rest of my life, and die happy.

I'm going to go put the veal on now, and start the cappelini for the side dish.

That and a green salad - iceberg, romaine, cukes, celery, last tomato of the season, shallots, croutons I made myself, Kalamata olives... Oh, yes, it doesn't get much better, does it?

18. No, it sure doesn't get any better than that.
Sounds like a meal I would prepare myself, well...except for the veal. But if I were faced with the same conundrum you find yourself in, I certainly would do the same.

20. Now that was a DAMN good dinner (see #17 above)...Even Mrs R, who is
the single best cook I've ever met, was impressed. I guess I've still got the chops, in the kitchen in addition to in the office and in the bedroom.

(Oops, didn't mean to make this a sex thread, mods; but you know that food and affairs of the soul tend to run in congruent paths...)

IMO CHICKEN Parmigiana is heaven We have an Italian place here (NOT OLIVE GARDEN!!!) that has the best of that.
