Does anyone bake with egg substitute?
I'm having to go low carb and low fat because of health issues. I found this recipe that calls for two eggs and I want to use egg substitute. It's a zucchini bread recipe.

Will egg substitute screw it up?

1. i was a baker for years
dried or liquid sub?
if dried reconstitute with slightly less water than directions call for
if liquid use as is but check package for info
if necessary check with the makers web page to see if the product will work for baking

2. I bake without eggs.
Very generally, if the egg is used as a binder, you can use 1/4 c. soft tofu, blended until smooth, per egg for up to two in a savory recipe. For sweet, use 1/4 c. applesauce. It'll turn out a little denser, but the taste will be fine.
