Everything from omnipotent avenging Father Gods to holy healing greyhounds.

Okay, maybe not exactly technically a pantheon since they denied that most of those in their sacred structure were gods, and were only mortals with a dual divine/earthly element, but once past the internal theology it's a minor quibble.

17. They just replaced the gods with saints & angels.
When pre-Christian Europeans converted, they just renamed their local deities and kept the same attributes & accoutrements for them.

But they also created really cool saints on their own. Some saints came from actual people, some from previous gods, and some from old legends. Guinefort the Holy Greyhound, for instance, was a local saint with a shrine and everything. Locals claimed he was a heroic dog who rescued kids from a burning hut, but modern research has shown that actually the rescue-dog story was a common legend in those parts stretching back ages, and if Guinefort had ever existed, it probably wasn't in the town that swore he had existed in their own town.

Medieval Christianity is a fascinating mix of erudite theology, popular spirituality, ancient pagan myth, and legend, comprising everything from universal figures like Mary or Peter to local legends and customs centered around mountain villages or agricultural manors. Sometimes it's fair to call a local custom "pagan," and assume it was adopted by Christians, and other times perfectly pagan-seeming saints and traditions were purely Christian in origin.

My favorite pantheon, though all pantheons are that complex when you get to know them.

Seriously, though--their gods were so HUMAN! Nobody pretended that their Gods were perfect--they raped, murdered, drank, fucked, and made merry, and were well-known for being jealous, spiteful, petty, vain, funny, occasionally clumsy, and generally good, all-around fun. If I had to pick, based on their descriptions and stories, which of these pantheons was most likely to have created US, the human race, I'd pick the Greek pantheon without a second thought. They're as fucked-up as WE are!
