Veggie latkes for lunch today. Yum!
We made them with grated potatoes, minced onions, shredded carrots, celery, sundried tomatoes, eggs, and matzo meal.

5. Aw, come on. We have to make at least SOME effort to increase
the nutritional value. We have a kid; we must be Good Role Models.

*Note: Being a Good Role Model does not actually include saving any of said food FOR the kid. But we can totally TELL him about it later.
