Got any favorite quesadilla ingredients? Help me out!
For some reason I've been on a real quesadilla kick lately, and I'm running out of ingredient combination ideas. Some are pretty similar. These are ones I make:

Old Standby: cheddar cheese
The Italian: mozzarella, sundried tomatoes, fresh basil, shredded grilled chicken (optional)
The Greek: hummus, feta, olives, sliced red onion
The Unnamed: white cheese, mushrooms, onion, spinach

Anybody got a quesadilla favorite?

Soyrizo, cheddar, jack, y frijoles refritos... topped with salsa and tapatio. :9

I have yet to settle on my perfect Mexican quesadilla, but that sounds like a good start!

4. Here's mine...
I fry my chicken in Diana's Chicken and Rib BBQ with Frank's Redhot, Tobasco Green pepper sauce, and chipotle powder. I fry it until it caramelizes (or whatever you'd call it). The cheese I use is a Black Diamond with cheddar, monterey jack, and various seasonings, jalapeno, tomato, etc. It's delicious. Goes well with icy cold lemonade.

8. that sounds interesting...
how does the chicken taste by itself? Is it like a spicy hot/sweet BBQ flavor?

11. Yeah, that pretty much sums it up. The BBQ sauce is sweet and tangy...

The other ingredients give it a nice spicy kick and add a little je ne sais quoi to the flavour. It's really tasty.

I came up with it through random experimentation.
