But I do wonder how the carrots and taters can be fresh if they're in a can.

Best stuff EVER! That was part of my regular diet when I was in college, practically a staple. Dinty Moore and beer...and donuts...

Pot Roast Provencal
Serves: 6 Active Time: 45 min Total Time: 3 hours 15 min
1 boneless beef chuck roast (about 2 3/4 - 3 lbs)
Wegmans Pan Searing Flour
2 Tbsp Wegmans Vegetable Oil
1 pkg (40 oz) Food You Feel Good About Cleaned & Cut Stew Vegetables, potatoes halved
3 cloves Food You Feel Good About Peeled Garlic
1 can (6 oz) Wegmans Tomato Paste
1 Tbsp Wegmans Herbes de Provence
2 cups red wine
1 carton (32 oz) Food You Feel Good About Beef Culinary Stock
Preheat oven to 350 degrees.

Dust chuck roast with pan-searing flour; pat off excess.

Heat oil in large braising pan on MEDIUM-HIGH, until oil faintly smokes. Add beef; brown, turning to brown all sides, 8-10 min. Remove meat from pan; set aside. Discard all but 1 Tbsp drippings from pan.

Add stew vegetables (minus potatoes) to pan; cook 4-5 min. Add garlic; cook 8-10 min. Add tomato paste and herbes. Cook, stirring, 3 min.

Add wine, stirring to loosen browned bits on bottom of pan. Simmer 5-10 min, until almost dry. Return meat to pan; add stock and potatoes. Heat to simmering; cover.

Braise on center rack of oven 2 hours. Carefully remove lid. Cook 30 min longer or until beef is fork-tender. Skim fat from surface and discard.

Transfer beef to clean platter; season to taste with salt and pepper. Pour sauce over beef.
Option(s): Also available in Wegmans Menu Creations in our Frozen Foods Department.

Nutrition Info: Each serving (5 oz meat, 1 3/4 cups sauce) contains 550 calories, 32g carbohydrate (6g fiber), 34g protein, 32g fat (12g saturated fat), 105mg cholesterol and 450mg sodium.

9. I know it's a "store brand" specific recipe
but you can obviously substitute. The pan-searing flour is basically a fine flour seasoned with salt and white pepper.

I've also made this as a stew, and it was perfection that you won't find in a Dinty Moore can.

12. Here's what I made for my Wife last night
when she came in from the nasty, winter weather. Doesn't matter that I'd shoveled the driveway.

Pan Roasted Pork Tenderloin

little olive oil(1 tbspn) and butter (1 tblspn)
brown the tenderloins on all sides
lower heat and cook until 155 inside. should still be pink.
Remove and wrap in foil

Add minced sweet onion to the juices
Stir until clear with wooden spoon, not browned
Add 1/2 cup Apple Cider
cook down somewhat

Add rosemary, 2 bay leaves, salt, pepper and 4 teaspoons of Dijon Mustard
cook down again. Remove the leaves.

Slice meat and cover with the sauce.
