Question on scrambled eggs for large breakfast events.

Question on scrambled eggs for large breakfast events.
I heard this morning that some large hotels, catering services at convention centers, etc. don't bother cracking the eggs they use for scrambles and omelettes at those awful large corporate breakfasts in ballrooms. They just throw the eggs, shell and all, into super-blenders and pulverize the shells along with the rest of the egg. I bet airlines do this too, don't they?

I understand why they would do this rather than crack thousands of eggs. And my source on this heard it directly from an events director at a convention center declared, "WE CRACK ALL OF OUR EGGS."

Anybody know anything about this stuff? Anybody care?

1. I think they buy cartons of genuine egg product
that's what our school cafeteria does.

do egg shells have any nutritional value? I wouldn't think it would of much harm especially if they have been doing it for some time.

14. not all kidney stones are from calcium
but some are.

But that doesn't mean that you shouldn't take calcium supplements. Talk to your doc.

3. It doesn't seem possible that they could pulverize the shells enough
to get rid of that awful "crunch" sensation, but, hey, what do I know? :shrug:

6. I doubt it
it would be harder and more labor intensive (ie: expensive) to try to get rid of all the eggs.

Most big event places and restaurants now use cartons of eggs - they are homogenized, so "safer" if undercooked, etc.

13. I would say as opposed to buying egg in half gallon cartons like lots of high-output
institutional breakfast places do.

Quick for omelettes and scrambled, other orders can be done as needed.

19. OMG, no!! If they pulverized the eggs enough for the shell to be unnoticable,
the eggs would be nothing but pure foamy tough awful crap, unrecognizable any longer as eggs.
