1 cup sugar 1/2 cup water 1/2 cup white vinegar 2-3 tbsp garlic, chopped finely 1 tsp salt 1-2 tbsp chili-garlic sauce
Combine sugar, water, vinegar, garlic and salt in a small stainless or enamel pan. Bring to a boil, then simmer over low heat for about 20 minutes. The liquid will reduce and thicken to a syrup. Remove from the heat and stir in the chili-garlic sauce.
It's sweet, tangy, and hot.
One of my favorites is 1/4 cup white vinegar, 2 tbsp good quality fish sauce (nuoc mam), 6-8 Thai birds-eye chilis, minced. Combine and let sit for 30 min before serving.
This one isn't vegan, though. I've substituted light soy sauce and it's good, but I like nuoc mam better.
