What to do with leftover holiday ham?
I mean really? How much bean soup can a family actually eat? How many ham sandwiches? Ham and noodles? Ham rollups? Ham salad? Ham loaf? What the hell am I supposed to DO with 7 pounds of leftover ham? And the first person that says "Buy a smaller ham next year" I'm going to push you down. Really.

Ham, Asparagus and Swiss Omlettes

Ham and cottage cheese mixed into egg noodles.

Ham and tomato sauce over pasta (Actually very good)

Ham and Asparagus Risotto

Ham mixed into Spanish Rice (nice with some peas mixed in)

Ham Salad on Biscuits or little rolls

Creamed Ham over toast with a poached egg on top

18. I would freeze it in meal sized portions and use it in casseroles
like this one:

HAM, BROCCOLI AND RICE CASSEROLE

1 box frozen broccoli
1 c. cooked rice
1 c. ham (cut into bite size pieces)
1/2 c. chopped onion
1/2 c. sliced mushrooms
1/2 c. chopped celery
2 T. butter
1/2 c. sour cream
1 can cream soup (good with mushroom, chicken or cheese)
1 c. cheddar cheese, grated
Pepper to taste
1/2 c. bread crumbs

Cook broccoli according to package directions. Saute onion, mushrooms and celery in butter. Combine with rest of ingredients (except for bread crumbs) in a 2 quart casserole. Sprinkle bread crumbs on top. Bake at 350 degrees for 30 to 35 minutes.

I love ham loaf.

But I rarely have enough ham to make it.

Two other suggestions:

1. cheesy potato soup with ham chunks -- delicious!

2. dilly ham meatballs, made with ground ham, dill weed, egg, bread crumbs, a bit of celery seed or caraway seed. Brown and cook in a fry pan, serve with buttered egg noodles.

20. Horse radish
Ham Salad

Grind ham or food process it (I prefer to grind it)
Small dice onion, celery and cucumber
Real Mayo.
Lots of horse radish
Black pepper to taste (probably won't need salt)

Good bread or saltines, YUM!
For me leftovers are never a problem, I can't get enough of it but the horse radish is an absolute must!

21. Fried ham with waffles, pancakes, and/or eggs.
Scalloped potatoes and ham.

Au gratin potatoes and ham.

Ham salad.

Ham soup with dumplings and vegetables instead of beans.

Hot grilled ham and cheese.


If necessary, you can ship the ham leftovers to me. :D

but my teenage son took care of that! :rofl:
And I only got one serving yesterday and a sandwich today.

Rent a teenager! That should take care of your 'problem'! ;)
