I am in the mood to cook something for dinner-- I need suggestions/recipes
I have about a 30 dollar weekly food budget, but I want to make a big meal tonight that has a lot of flavor and is NOT stir fry/rice and beans related--I'm sick of that shit :D
I can cook for a long time tonight, which means I can do something a little more elaborate than what I usually do. But I don't have any recipe books or anything--I need IDEAS and INSPIRATION from the DU lounge! :D

3. Or, you still have time to make some homemade chicken noodle soup
Get yourself a package of chicken thighs and start your soup, then make your noodles, and they'll both have time to cook/dry/etc. by supper time.

Serve with a loaf of homemade bread, lots of butter, and voila - life is good!

4. This is a recipe I invented, and it's easy
Chicken & black beans

4 boneless, skinless chicken breasts
1 can black beans
2 tbs cumin
1 tsp salt
2 tsp black pepper
2 tsp chili powder
grated cheese if desired
salsa (recipe for that follows if you don't want to use store bought)

Pour the black beans into a casserole dish. Stir in cumin, salt, pepper and chili powder. Arrange chicken breasts on top of the beans. Spread salsa liberally on top of the chicken breasts. Bake at 350 for 1 hour. If desired, add grated cheese and put back in the oven for another 5 minutes.

The beans will come out like black bean soup. You can either serve them separately as soup (I like to add rice sometimes) or ladeled over the chicken.

Awesome salsa recipe:

2 cans Ro-Tel (one regular, one extra hot)
1/4 medium onion
1 tbs salt
1 tsp cumin
1 tsp garlic salt or minced garlic (the minced garlic is better)
1/2 bunch fresh cilantro*

*it will seem like a lot, but trust me....it's just right

Put everything except the cilantro in the blender on high for about 15 seconds. Add the cilantro and blend on high another 5 to 10 seconds (if you run the blender too long after you add the cilantro it will come out with a more brownish color). That's it!

9. Well since it's getting a little cold
How 'bout some beer chili?
2 cans red kidney beans
1 can (big-24 or 32oz) whole peeled tomatoes
1 can (small 6 or 8oz) tomato paste
1 fresh tomato
1 bell pepper
1 yellow onion
2-3 cloves of garlic
2-3 jalapenos (or other hot pepper)
3/4-1 lb ground beef (I use turkey sometimes, tastes just as good and cheaper)
pepper, chili powder, cumin, 2 whole bay leaves (not necessary, but I always throw a couple in)to taste

brown meat, drain, throw in chopped veggies, beans, tomatoes, jalps, leaves and 1/2 to full can/bottle of dark beer (I use Shiner Boch)

simmer for as long as desired, I usually leave mine for about 2 hours
top with cheddar chz or sour cream and you're good to go
This is A LOT of chili so you can eat off it for several days-I'm all about the left overs.

or one of the other recipes, ALL OF WHICH had stuff you didn't want in them. :7

That's what we had for dinner tonight.

Get some corn tortillas, deep fry them in oil until crisp.

Get a can of black beans, toss them in a skillet with some oil, and mush them (make your own refried beans this way)

spread the beans on the tostadas, sprinkle some cheese on top, add some diced avocado and chopped onions, a spoonful of hot salsa (not tabasco, a chuncky salsa), and a few leaves of cilantro.

You're good to go.

15. Beer bread!
1 12oz can of room temp. full strength beer (any brand)
2 tb Sugar
3 c Self rising flour

Very thick batter. Place in large mixing bowl. Take 17 strokes with fork. DO NOT OVER MIX. Put into greased bread pan. Let set 15 minutes in warm place. Bake in 350 degree oven for 1 hour 15 minutes.

If you don't have self-rising flour; here's how you make it: 1 cup flour --minus 2 teaspoons flour-- add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt.

YUM!!!!
Feel free to add herbs and cheese as you like...

Basically a stuffed eggplant. Very yummy.

Here goes........

One medium eggplant
I pound of lean ground beef
Juice of one lemon
One half cup of rice
Three crushed garlic cloves
One large onion, diced finely
Two tablespoons of savory
One can of tomatoes

Cut the eggplant lenthwise in two (the long way for you Americans). Core it and keep the innard stuff to make the stuffing. Combine all the shit above with the eggplant innards. Stuff the eggplant, cover with the tomatoes and bake for 90 minutes.

Heaven..............
