6. I always enjoy a quick chicken casserole!
Brown the chicken.
Cook the rice.
Place rice and chicken in a casserole and cover with one can Cream of Chicken and one can of mushrooms.
Sprinkle parmesan or other cheese on top and bake for 1/2 hour at 350 or until heated through!

1950'ish I know, but it's a classic!

I love it both ways! When I get one from the store, Mrs. Shakey (she would die if she knew I was telling you this) and I set it in the sink and just pick at it with a nice Pinot Grigio! :hi:

It's store bought. And the leftovers make great chicken salad, too!

18. I use an old deep sided fry pan I got at a 2nd hand shop
that's been fitted with a similarly 2nd hand steamer rack. I got the idea from seeing one of these:

It needs a lid and some sort of vent. It should have deep sides, a rack designed for vegetable steaming can be slipped to a point half way down the sides. Then I put some soaked wood chips in an old tuna tin and put the whole thing over the heat. As the pan heats the chips smoke and the product cooks simultaneously. Cold smoking is not a viable option in such a pan.

22. It's not big enough
to generate more smoke than having something fall onto your burner during cooking.

Fish will cook in such a contraption in under 15 minutes. It will impart a light 'smokey' flavour to lean, quick-cooking items, but to flavour something like baby back ribs would take upwards of an hour & a half to smoke and then cooking time. That's not practical for a stove-top smoker.


So the short answer is, used correctly on the appropriate product, it's a bit smokey, but not overwhelmingly so. I wouldn't use it around a sensitive smoke alarm, and I'd definitely turn the fan in the hood vent on.

Whenever there's a thread like this her sheer creativity and the effort that it would take a mere mortal like me to produce such dishes simply stuns me. I mean, especially when my offering would be something like "raisin bran flakes with flax seeds and milk with a Kraft chocolate pudding for dessert" (and it's not always that I produce such an ambitious meal).

25. An excellent sauce,
but I usually just wolf down the chops without any at all. They're the blade chops, anyway. Loin chops are going for over 10 bucks a pound around here, and I'd feel like I'd have to stuff them with truffles and caviar at that price.

Should I make a sauce, I usually have some chicken and beef stock lying around, and toss in whatever red wine is open, various herbs and spices, and don't reduce all that much but thicken with sour cream and instant potato. Real mashed if I happen to have them around. Maybe a bit of tomato sauce if I feel like it and have some handy.

It's my basic gravy/stew/whatever. I got away from roux and deglazing a while ago for no good reason except I started cooking in different ways. I'm big on braising, stir-fry, and grilling now.

(note-- I couldn't live without cinnamon, basil, and cayenne. Everything else is optional)

I add onion soup, chopped spinach, salt and pepper to the loaf; put it in a stainless steel baking pan on the grill, and melt monster cheese over the top in the last couple of minutes of cooking time.

Fresh corn on the cob and cucumber/tomato salad on the side...
