Potluck tomorrow. What should I bring?
It's reasonably cool out today, so I don't mind heating up my kitchen and preparing something.

Entrees and beverages are taken care of, and someone is bringing deviled eggs. Appetizers? Desserts? Sides?

To past potlucks at work, I've brought hamentaschen (it fell right around Purim), vegetarian maki rolls, deviled eggs, and custard-and-berry tartlets.

I should add -- I am a scratch cook, so if it involves Cool Whip, Jiffy Corn Muffin Mix or canned cream of mushroom soup, I probably won't be making it this time. (Still -- feel free to post for others!)

5. The problem I've always had with homemade m&c is reheating
(Which I'd have to do.)

It's good when it's first made, but it separates and gets nasty after awhile. This happens with just about any recipe (even Alton's!).

Suggestions?

7. Oh yeah...that's true.
The only way around the separation is to let it cool a bit before serving to let all the cheese re-coalesce.

13. meatballs make a great main dish
I use 1 1/4 lbs of ground beef or ground turkey and add one onion (chopped) 1/3 cup parsley (chopped), 1/2 tsp sage, 1 egg, salt & pepper, and 1 moistened slice of bread.

mix it all up and fry 'em in olive oil.

(I cheat a bit w/ the gravy... I use one envelope of McCormick's brown gravy and add one can of cream of mushroom soup (I know eyesroll won't use it, but that doesn't mean you can't!))

8. Someone else has already put "veggie pizza" on the list.
I was considering cookies, but I'm not sure what.

Next time I go on a cookie baking binge (which likely won't be tonight, regardless of what I make), I'll send a bunch out to Cleveland...I figure there's enough people out there to overcome any "but I'll eat too many of them/it'll blow my diet" objections...

You'll need a thermometer.


3 cups sugar
1 cup milk
1 dash salt

stir in a large saucepan. Heat over medium to one notch past "soft ball" stage on candy thermometer. (Do not stir once mixture is over heat.)

Remove from heat and add

1 cup peanut butter
1 cup marshmallow fluff
3 tbs butter/margarine
1 tsp vanilla extract
1/2 cup chopped nuts (optional)

and stir thoroughly. pour into greased 13x9 pan and allow to set.

Looking back at your post, this fits NONE of your qualifications (not vegetarian, not scratch, and no cooking involved)

But it's nice and easy for those of us who use their oven to store cat food but are still expected to contribute to pot lucks. No heating involved at any point - not a selling point tonight, but it comes in handy when things get ugly again.

Don't have the exact measurements, but you combine a pack of cream cheese, about a teaspoon of horseradish and one of lemon juice, 2 tablespoons of Scotch, some shakes of tabasco sauce, and a bunch of chopped up smoked salmon/lox. Then, with a melon-baller, scoop out a hollow in a 1/2" cucumber slice, and fill with a ball of the cream cheese mixture. Top with a strip or two of lox. Serve chilled on a nice cold tray.

This goes over really well on hot nights. I brought it to a picnic on the Main Line and my straight yuppie friends loved it, and to a Summer Soltice party the same night, and my Wicca friends ate them right up, too.

So many lush fruits in season. I find it's always a hit, I usually make a dip of yoqurt and honey on the side.
