Veal ideas?
I have $3 of eye of round veal in the fridge and am trying to muster some ideas of what to do with it. Since it's such a small amount, it doesn't seem like there's enough for it to be the primary ingredient in a dish. (e.g. veal parmesan would be a no-go) Rather the idea would be to incorporate it into a recipe with other veggies and pasta or rice or something. Any DU chefs have any ideas or inspiration?

18. The day I learned about how they raise the calves, I stopped eating it ...
That was about 10 years ago. While I am not a vegetarian, I just could not continue eating it, no matter how it tasted.

6. Didn't take long for the anti-veal crowd
Anyway, I would suggest a simple pan frying of it. Dose it with salt and pepper, toss it in the pan, and cook it for a few minutes on a side.

Then, when it's cooked, take it out and keep it warm, and deglaze the pan with some chicken broth, throw in some minced shallots, maybe even some previously cooked portabellas, reduce it down, swirl in a pat of butter at the end, and you'll have a great little piece of meat. You could even add cream to the sauce, if you wanted.

Make a salad, steam some asparagus (or better yet, with veal, I'd suggest those tiny little squashes that come in yellow and green that you eat the rind anmd everything - wish I could remember the name), and you're all set.

Congratulations!!

And I do agree with you, and I don't eat veal for the very reason of how they are penned in and how they "live".

If they let the baby cows run around and at least breathe some fresh air,I wouldn't mind killing and eating 'em. But it seems so wrong to deny them any of the goodness of life first...

15. My idea would be to abolish the use of veal crates altogether.
Since the majority of folks KNOW how they're treated, yet still eat it, shows me the selfishness of those same folks.

The price of milk and cheese might go up, not that I care, as veal is simply a by-product of the dairy industry. I mean, they have to do SOMETHING with the rape-rack offspring, don't they?

19. Give me a break.
You know the definition of selfish, right? Let's look at a couple other examples:

Driving a Hummer as a commuter vehicle. Selfish?

Throwing your trash on the ground rather than throwing it away in a trash bin (or toting it with you until you get to one). Selfish?

Doing something that one knows to be wrong, simply because one wants to, is a selfish act. Everyone is selfish at times, myself included.

BTW, if you look at my post, you'll see that I never mentioned anyone being "too fucking stupid" to figure out anything. I'd suggest where you could cram the "holier than thou" statement, but that would be...well, you know.

31. Indeed. We obviously should agree then that we have different
definitions of "selfish" and what constitutes same. Just so it's clear, mine came from a dictionary. Maybe what you believe to be "opinion" is whether or not veal calves are treated cruelly, or if it's wrong in practice. I don't know, as your "opinion" post wasn't specific (I made several statements in my post) as to what, exactly, my opinion was referring to.

You may believe that it's okay to chain veal calves up, in a tiny crate, to live in the dark for the entirety of their lives. That's your right. You also, naturally, have the right, when faced with a differing opinion, to get your panties in a bunch, and throw out the oh-so-boring "holier than thou" card and imply that the poster (with the differing opinion) thinks everyone "is too fucking stupid" to see it their way.

Infiniti. Nyah.

32. .
http://en.wikipedia.org/wiki/Veal

cows are a domestic animal, and have been for thousands of years. have you ever been on a farm where they were raised? i grew up in the midst of many of them, and, no matter which way you slice it, they are not the smartest of herd animals; many of them appear to be functioning based solely on activity centered in their brain stem. i think that people tend to sensationalize how veal calves are raised, and, if all of them were raised by the description you gave, i wouldn't eat veal. this isn't the case, though, and this is where your opinion fails to meet fact. better?

38. so what? so what? so what?
if you care to sensationalize things and say that "all veal calves are treated poorly", then i refuse to keep posting with you, as you already know this to be false, and you're wasting my time. and, frankly, i don't believe most veal has done time in a crate. if i have a way of knowing, i'll make the decision based on that. if not, then i won't. it's just not that important to me; i've seen how cows live, and i'm ok with it. that's my opinion, and if you think that's selfish, you can keep calling me selfish, and you can also take to heart the following statement "your opinion means less to me than the tissue with which I wipe myself following defecation."

re: "I know lots of people that appear to be functioning solely on activity centered in their brain stem. So what?" i knew the people argument was coming; and i'm not going to dignify it with a response, as I don't believe that animals and humans are apples and oranges (and i'm sure this is an obvious and central difference in our thought). if you think this way, then we have nothing further to discuss.

I'll also say this, I do hope that because we have vastly differing beliefs here, that when the time comes that we're on the same side of the table (of course, I mean politically speaking), that you won't hold our differences against me, as I surely wouldn't do that in your case.

51. You are SO right on.
Veal is disgusting, and probably the cruelest "form" of meat today, aside from in Asia where they string cats and dogs up alive and beat them while they are alive to terrify them because they think it "tenderizes" the meat.

Don't let anyone pick on you. Veal is disgusting and ANYONE who eats or buys it is a selfish person im my view. Period. (you can argue with me all you want but you won't change my mind in the slightest, I've likely heard better arguments from better people and it has maed no difference).
