3. It's over 80 here
I'm going to fire up my mini-Weber and cook a pork steak. Chops are too damned dry these days unless you brine them. I'll probably sautee a huge pile of cabbage on the side.

5. Pesto Salmon Fettuccine
INGREDIENTS:

2 grilled salmon steaks
1 lb. fettuccine pasta
12 oz. container basil pesto
1 pint heavy cream OR 2 cups evaporated milk
1 cup frozen baby peas, thawed and drained
1/2 cup grated Parmesan cheese
1/2 cup chopped cashews, if desired

PREPARATION:

Remove skin and bones from salmon and gently break into large pieces.

Bring water to boil in a large kettle and cook fettuccine until tender; drain. Meanwhile, while the pasta cooks, bring heavy cream or evaporated milk to boil in a large saucepan.

Remove from heat and stir in salmon pieces, pesto, cooked and drained fettuccine, and peas. Return to heat and cook and stir gently until fettuccine is coated and mixture is thoroughly heated. Serve with Parmesan cheese and chopped cashews. Serves 6

18. curried creamed spinach
you can add farmer's cheese for Saag Pinar, or chickpeas for Chooli Saag, but we just like it plain. And to think I hated spinach when I was growing up. Must've been because it wasn't made this very tasty way.

10. I'm debating
I have a Wild Copper River Salmon fillet (very small since it is expensive) or fresh talapia fillets. I just want to eat either very plain. Any suggestions how to fix the fish?

24. Tilapia..
Drizzle in olive oil, a dash of oregano, and a hint of salt. Cook it in the oven in an open dish until done, which for me is sort of crispy. Simple and delicious.

21. Have you tried a veggie product called Quorn yet?
I just heard of it but haven't tried it yet. It's a UK product made from mushrooms. quorn.com shows all their products. Looks yummy

23. No, I've never even heard of it before...
I'll have to check it out. Thanks for the head's up. We aren't vegetarians, but I try to feed my family "mostly vegetarian". I only feed them meat 2-3 times a week and we try to stick to fish and chicken. Once in awhile they get red meat, but not too often. I'm always looking for new ideas.

20. smoked salmon and avocado sushi (west coast checking in here!)
My local grocer sells the trimmed-off bits of salmon quite cheaply, and when it's rolled up, the raggedy parts aren't noticeable anyway.

25. I had a lite Caesar salad and the last of the leftover baked beans.
My husband brought home a double tall decaf nonfat toffee nut latte for me, and I'm enjoying that now. I'll have a dish of strawberries for dessert later.

29. My husband asked me to make something simple since he wasn't
sure how hungry he was going to be...So I made Swiss steak (browned top sirloin baked in the oven with mushrooms, and stewed tomatoes), and some new little potatoes. It was yummy! Turns out he had more appetite than he thought he would, and he went back for a small second portion. Easy cleanup, also...A winner, all around.
