I used to hate egg salad as a kid because inevitably I got an egg shell in my sandwich! (gross). I love it now! I add a dash of curry powder to mine and it's wonderful, especially on rye toast!

I got egg salad sandwiches in my lunch every day for a week and didn't touch them for awhile after that.

But I agree with you. Since they're so mild, they can be fired up with any combination of seasonings that appeals to you.
