1. For what kind of dish?

6 oz. apricot preserves
6 ozs. spicy brown mustard
a shot of port wine OR bourbon

this would be a good ham sauce.

3 tbsp. flour
3 tbsp. butter

melt butter and stir in flour, then add slowly 1 cup milk. Stir until thickened and add 1 tbsp. dijon mustard and dash tabasco

that would be like for asparagus

3. Green beans and maybe turkey...
I'm a vegetarian, and I know it's usually used for ham, but DAMN I love mustard sauce!

5 ounces dijon or favorite strong mustard
5 ounces orange marmalade
1 ounce pinapple juice



It's easy and yummy

8. The Ultimate Mustard Sauce
Devised by my SO. I use it for meat, but you'll like it no matter what you use it with.

Butter Lager Sauce
4-5 Tbsp. Honey
1-2 Tbsp. Mustard powder
One stick unsalted room-temperature butter
12 oz. Brown Ale

The recipe I use it with:

One double-thickness Tenderloin steak, 1-1/2 lbs.
8-10 slices smoked bacon
2 slices smoked bacon, chopped
One whole shallot, chopped
2/3 bulb garlic, finely minced
1/3 bulb garlic, chopped

Assemble the mise en place.

In a mixing bowl, stir the honey, mustard powder and butter until whipped.

Using a paring knife, cut dozens of holes in both sides of the roast, twisting the knife to open them wide. Stuff the chopped shallots, chopped garlic and chopped bacon into the holes on both sides. Smear the minced garlic on both sides. Top with all remaining chopped garlic and shallots.

Drape the bacon slices over the meat from one end to the other. Carefully turn the meat and fold the strips across the center. Place in pan and top with half the honey-mustard-butter sauce. Pour in the brown ale to a depth of 1 inch. Place remaining chopped bacon around sides. Bake at 300-350 for 2-3 hours, turning midway through and basting with additional honey-mustard-butter sauce as needed.
