Brennan's on Bluemound -- I asked the cheese guy how many varieties they carried. He said it varied, but often right after the State Fair and the world competitions (they buy from most of the entries and all of the winners) it was close to 2000.

Black Table's graphics department handled the illustrations; I'm not sure if there actually is a "FIB" scrawl across any real-life signs.
