The Great Zucchini Deception---Continued
Well the General Tso's Zucchini did not go over well on Friday night.

However last night it was Zucchini meatloaf and Zucchini Brownies. The family didn't have a clue. HEE, HEE, HEE, HEE.

The meatloaf was moist and tender and the Brownies were not as chewie as I like but still good.

We'll have a zucchini free night tonight but this week I've planned zucchini meatballs and spagetti, Zucchini/Potato Pancakes, and a Chocolate Zucchini Orange Cake.

I still have enough blossoms to fry up some zucchini flowers which my family will eat-so we'll be enjoying those as well.

Life is good.

Squash soup sounds good.

Try boiling it to death with some onions and garlic in some chicken or vegtable broth.

I'd add some crushed red pepper or some chopped chili's for some heat.

Run it through the blender then Finish it off with some Cream.

If you try it let me know how it works out.



Oh no...Looks like Pat's got me now I'm in the 700's. Help me I'm scared.

Lightly pan fry a dozen corn tortillas.

Cover the bottom of a large caserol dish with a little bit of fresh salsa. Put a layer of tortillas on the bottom of the dish.

Add a small layer of sliced zuchinni, zuchinni flowers, chopped green onion, and some brocolli.

Pour a little salsa on top of this and add some grated cheese. I like cheeder, but jack is more traditional.

Cover this with a layer of tortillas and continue layering till the dish is full, finishing with a layer of tortillas. Pour the rest of the salsa on top and cover with cheese.

Bake at 350 for 45 minutes.


Salsa:

Fill a blender with tomatoe chunks, and onion, and some cilantro. Add a jalapeno pepper, salt and pepper. Blend.

4. Do you have a recipe for Zucchini bread?
I'm willing to bet that they wouldn't have a clue on that one either AND that they would ask for more. :D

Sheesh. I hate it when people don't tell me what's in my food. I feel betrayed. People shouldn't be forced to eat something they don't care for.

7. Well don't eat at my house
You might get sauerkraut in the Chocolate Cake.

I'm of the school of if they don't ask, don't tell when it comes to kids and vegetables.

9. Yes, Definitely don't lie
It's the best way to lose your credibility.

I have a kid who loved ketchup until she found out it was made with tomato's-hasn't touched it since. Go figure.

They usually love what I cook though they did think the General tso's zucchini was a little over the top.

I've been putting tofu in the chicken parmigiana for years and they swear it's the best around. They now love tofu by the way.
