I just smoked 20 lbs of chicken-don't ask me anything
We're having an open house tomorrow, and I (along with several others) volunteered to cook. I've been smoking chicken all night. started the grill at 5.
I'm tired.
I can't wait to see the copycat threads from this one.

15. Wood or charcoal? What kind of wood?
What kind of mop? I just cooked a half chicken on indirect heat (275) from a hickory fire in the fire-box. I mopped it with a lemon/butter/mustard preparation, and served it with an Owensboro black sauce. I'm getting half-way good at this, in my spare time.

21. You MUST look into getting a weber smokey mountain (WSM)
Actually, there's a sale on right now at Amazon you might want to take advantage of, though it's kind of short notice. Check out this brilliant site that's dedicated to the WSM. It's www.virtualweberbullet.com. Once you start reading about this thing, you too will be aching for one. (That's what happened to me when I stumbled on this site after I was surfing around for weber info.)

That smoker is FANTASTIC, and when you learn you can set it up using the so-called "Minion method"---named after this guy who's a bbq champ and who posts on the site---and cook something like a butt or brisket for 10-12 or more hours straight, virtually unattended!---you too will fall in love with the WSM.

(You can help out the site by buying the smoker thru their link to Amazon, btw. Someone there posted this about the Amazon rebate:

18. By the way, the chicken got rave reviews!
I have to admit I was surprised at how tender and juicy it stayed, after having to go in the fridge last night then into an oven to warm it this morning. But all the juice was still there, and so tender it fell off the bone!

19. Good! That is the final test.
I experiment around, when I am up here in the mountains alone. But I have come up with some great BBQ techniques and mop/sauce recipes.

BTW: I share. Just ask.
