2. Granola bar
I've had mixed success with this. I've been tinkering with it and I have something that I like but not sure it's quite 100% yet if you try it I'll be interested to hear the results.

The trick is getting the right consistancy, so that it stays together, the taste is very good IMHO.

My "holding together" issues might be because I use homemade granola which I load with whole cashews (I love cashews :)) so if you use a granola with chopped or smaller nuts it may not be a problem.

1 egg
2 tbls of honey (doesn't really need it but it tastes good)
1/2 c cashew butter (be sure it is smooth and spreadable)
(can replace with Penut butter but I suggest use home made or natural w/o salt)
1/4 tsp salt (I use kosher)

mix and heat up until bubbly.

Mix in 1.5 cups (maybe a little less) granola

Put into a 8.5 x 6 inch pan (or whatever works, that's what I use)

Bake in oven at 350 degrees for 10 mins

Let sit over night in fridge.
