I'm going out to find a gallon of milk that hasn't been ultra-pasteurized. I read the mozzarella making instructions this morning and it doesn't look too hard. They say I can do this in less than an hour. I'm feeling hopeful because even if I can't get the cheese to stretch I can still make a mozzarella cheesecake from the recipe in the little pamphlet enclosed with the kit. Apparently, I can also make ricotta from what they sent me too--but I'm going to leave that for another day.
