20. My mother used to make those
Her mother was Ukranian. She used to make only the nut and poppyseed varieties. I remember her starting the dough very early in the morning. She would put it in a big deep basin on a chair behind the coal stove to raise. I don't ever remember her making less than 6 of each type of roll so she'd have enough to share. I haven't eaten as good a roll since she can no longer make them.

One of my biggest regrets is that I never bothered to bake with her to learn her little secrets. She never measured anything and did it all by feel, which was her term.
