The ones who work in restaurants, stores and agribusiness for example usually have fake SS numbers, so they pay into someone else's account or into a non-existent one (the SS admin appears to be lax in overseeing this area), and their employers deduct all their taxes from their paychecks.
Day laborers and domestics are another story, but I think employers are responsible for paying the taxes of domestics, though they often don't.
