but I made it the Puerto Rican method - at 350 for about 4 hours, till it
is falling apart (you marinate it overnight first)

It is superb.

FWIW, some animals, especially elk, are prone to "Brain Worms", arizing from a fly laying eggs in one ear of the unfortunate critter, and the larvae eating their way through to the other ear to exit as flies.

Makes me feel all ...wriggley...
