Boil up a lb of spaghetti. While it's getting to boiling, make up the salads or veggie sides.
Salt the water until it's as salty as the sea.
Grate a cup of REAL PARMESAN CHEESE. Please don't ever use the fake stuff.
When pasta has been cooked according to directions, take away a cup of the pasta water and set it aside.
Drain the pasta, set aside.
Put the pot back on the stove, turn the heat to medium. Melt 3 tablespoons of butter in the pan, add some grindings of nutmeg, then add your cup of pasta water, and bring to a simmer, and let it reduce down to about a half cup... takes about 5 minutes, then add your pasta back into the pot.
Using tongs quickly coat the pasta in the butter sauce, reaching in and pulling up through, then add the parmesan cheese as you continue the same action. Serve this up and next time, double the recipe, since your family will demand seconds. And thirds.
