Name a song that Weird Al Yankovic should have spoofed, but never did
He can spoof it either by changing the lyrics, or playing it polka-style, or both.

I nominate Time by The Alan Parsons Project. Very moving and melancholy piece, but just wait until you multiply the BPM times two and throw in that wicked accordion...

Weird Al performed a mini-version of Closer as part of a polka medley on the album Bad Hair Day. You got your wish! (Well, sorta.)

5. This is a tough question
Weird Al's parodies work best when the song isn't great (so no one will be too pissed off) but also not too bad either (otherwise it's too hard to do a parody that isn't just a rehash of the song).

So, I would nominate a couple Queen songs, like We Are The Champions and Crazy Little Thing Called Love.

I don't think he got into metal enough. But any song that takes itself too seriously is a ripe target. Amish Paradise is a classic.
