Monday dinner thread
Garbanzos and potato in a homemade curry sauce: tomato, peaches, lime juice, onion, garlic, red bell pepper, ginger, cumin, cinnamon, paprika, red pepper flake. Homemade pita bread with sesame seeds.

1. Tibetan Curry
I was talking to a friend about it a couple of days ago, and it set off a craving. I'll put it over jasmine rice.

4. It changes every time I make it, but
here's a basic idea:

Some kind of meat, tonight I'm using beef. I think it calls for around 1lb but I just use as much as I have on hand.
3 onions, chopped
4 tomatoes, chopped (I'm allergic, so tonight I put in zucchini instead, also green peppers and mushrooms and carrots. Not traditional. I don't care)
4 large potatoes, cubed (and parboiled or precooked)
1-2 tsp fresh grated ginger
3 garlic cloves, pressed or minced
1 cup plain yogurt
1 tsp paprika (I use more)
1 tsp Madras curry (I use more)
A whole cinnamon stick
1 star anise
5 whole cloves
3 bay leaves
1 tbs soy sauce
1 tbs oil

Marinate meat in yogurt, paprika, curry, garlic, ginger and soy sauce. I usually do it for a couple of hours, but it depends on the meat.
Heat the oil in a saucepan over medium, saute onions. Add cinnamon, anise, cloves, and bay leaves. Cook until onions caramelize.
Add meat and marinade, bring to a boil over high. Add tomatoes and potatoes. Reduce to medium and cook uncovered for about 25 mins. Reduce to low, cover, and simmer for 30 mins. Stir fairly often so sauce doesn't burn.

Remove the bay leaves, cinnamon stick and anise before eating :)

6. we got a new grill yesterday and bought T-bones to break it in tonight BUT

it (or the propane tank) was leaking gas

so instead we had

Smoked Beef Sausage (fried)
Roasted Red Taters
Corn on the cob
green salad


we'll get another propane tank tomorrow and see if that clears up the trouble :shrug:

7. Homemade artichoke hummus
with a sprouted wheat tortilla and half an ear of corn I boiled last night cold outta the fridge. Oh, and a small slice of angel food cake.

10. As best I can.
1 can garbonzos, drained
approx. 1/2-1 tsp. tahini (I don't like very much)
approx. 1 tsp. minced garlic
approx. 5 marinated artichoke quarters (I like the Mezzetta brand best.)
juice of 1/2 lemon
salt, cumin, and garlic to taste

Place all ingredients in food processor and pulse while stopping every once in awhile to add extra virgin olive oil until it reaches a smooth consistency.

I don't measure anything, just throw it together.

9. A tuna wrap (it was free), sweet potato and about doz. raw clams.
The clams were ones I brought back fresh from CT. Unfortunately, the actual fishing sucked this weekend. The only fish we "got" was a striper we speargunned.

12. I made this casserole
that consist of hamburger meat, hash browns, green beans, cream of mushroom soup and french fried onions. ( I don't like it much but my man loves this dish) A side of cucumbers and for desert, homemade sopapillas with honey. :)

13. Roasted chicken, mashed spuds, gravy, broccoli
We had a great thunder/rain storm and it was cool enough to roast chicken in the house - otherwise we probably would have grilled it outside. Just had a bad craving for some spuds and gravy so it woeked out.

Fresh cantaloupe for desert.
