that what Americans call Canadian bacon is pretty much unheard of in Canada. We do eat cured pork loins (and call it back bacon) but back bacon is never smoked. I don't think I've ever seen a boneless smoked pork loin.

The choicest cut of pork is the loin, known from pork chops. Remove the bone, cure it smoke it , and you have a much superior bacon then bacon from the hog's belly.
