People don't fix it often enough. A lot of people only do it once a year for Thanksgiving, and so they associate it with an unnecessarily over-complicated meal.

Back when my sons were growing up, I would make a turkey every couple of months. In the middle of the week they'd come home from school to turkey dinner. Yes, yum.
