It's so easy, so good.
Unpackage, rinse, put in a deep aluminum pan, and use some balled foil to hold it upright. Brush with olive oil and sprinkle with fresh chopped herbs (I love Thyme and/or Rosemary), or shove some sprigs under the skin.
What I do is put it on the Weber Kettle, indirect method with each basket about 2/3 full, plop the bird in the middle, and cook to 160F internal. Takes about 1.25-1.75 hours. I have a temp gauge that transmits to my phone and rings me when it hits 160F. That ... is an awesome tool, btw.
Oh, also, toss some wood chips in the baskets right before you close the top. Apple, Oak, and Mesquite all work great, and give the bird distinctive flavors (I guarantee you I could tell you if a bird was cooked with any of those 3 woods, and which one was used )
Then remove when it hits the temp, put foil over, and a towel, and let it sit for about 10 mins.
It comes out freaking awesome and you have delicious, lean turkey breast for sandwiches (WAAAAY better than lunch meat style turkey breast!), or to put on salads ... for about 5-6 servings. It's also STELLAR for making turkey soup. Can also make some gravy from the drippings but not a lot, it doesn't put out that much drippings in general.

It's taken since Saturday afternoon, but little Jean Luc has emerged from under the bed!
I mean, he's been out a few times when I was awake ... who knows what he was up to when I was asleep ... but overall, it took about 3 days for the baby to decide that it's safe to come out and explore in daylight hours.
He is absolutely stunning-looking, an utter love-bug, and soft as can be!
And perhaps most auspicious, he's down with hanging out on the 15" subwoofer while music is on (not LOUD or anything, but it was playing!)
