It's cooling on the racks as I type.
I have some oranges left from my last produce box. I was thinking I may add some orange zest to the cream cheese frosting. Does that sound weird?
I thought a fruity element might be nice w/ the cinnamon and spice in the cake... and since I don't like raisins and refused to add them to the cake,... orange zest in the frosting? Maybe?

(10,014 posts)I made an apple dilly cake with cc frosting last week. Ive had the recipe since I was a teen and its always delicious and moist. It has a cup of chopped walnuts, a cup of chopped apples, pumpkin pie spices, and a cup of cold strong coffee.

(2,674 posts)I have made many carrot cakes and I always put a little orange zest in the batter (if I happen to have oranges on hand). I too, make a cream cheese frosting, adding orange zest, a little orange juice and a squeeze of lemon juice.
I have made several recipes for carrot cake, my favorite is with dried mincemeat. I have also make a good one with carrots, crushed pineapple and pecans - this one makes a lighter cake.

(111,255 posts)I never put raisins in mine, either, just nuts if I have them on hand. Frosting is as simple as possible so I can taste the cake.
I tend to go for simplicity, though, especially now that I've gotten old.
