Sole, cooked in coconut milk. There will probably be some other additions to the dish, but at this point the RG doesn't know what they will be.
For side dishes, broccoli rabe and Italian broad beans.
I might make cucumber salad with red onion and crema Mexicana.
For dessert, shortbread cookies and flan. A dab of orange preserves on the shortbread cookies.

Dad & Sis got shrimp (which was marinated in olive oil, lemon juice, garlic, dill and Old Bay, then cooked in the grill pan on the stove), rice pilaf, butter beets, and steamed green beans.

Steamed asparagus and brown rice topped with saffron.
Vanilla ice cream for dessert.

ya can't rush a good fricasse, but don't want to get it too involved either
