Eggplant-almond enchiladas, one of my favorite Mollie Katzen recipes. Mollie's recipe calls for corn tortillas, but we'll use the flour low-carb kind from Trader Joe's. Of course I am using my own eggplant that I grew. The recipe also has green bell pepper, shredded jack cheese, and minced onion. The RG is making it, however, so he always has to add his own touch. I'm not complaining: it's always good!Tossed green salad using one of the new dressings I bought at Aldi. I think it will be the apple-thyme one. I was able to get red leaf lettuce and watercress at the Korean greengrocer, and I think that instead of vegetables, I'll just slice a pear and have some tiny cubes of Manchego in it.
Five-seed almond bars for dessert (TJs again). Since it's not low-carb, only half of one. Watermelon.
To drink fizzy orange Italian soda.
p.s. it's hotter than Hades here.

(17,516 posts)I have a pot of cranberry beans on the stove. It is too hot to be doing this, but it was now or never for the ingredients.
lots of ham
home made ham stock with some store bought chicken stock to top it off.
the usual celery, onion, and carrot
the unusual (for me) orange bell pepper and I may add some mushrooms towards the end.
Seasonings, garlic, pepper, sage and bay (so far).
It would be nice to have cornbread, but I'm not turning on that oven. Some garlic butter with crackers or toast will do.
FLFC is sleeping in bed with TJ as I type. I have several hours before he can demand and then reject the beans, saying "but I smelled ham!"

(15,095 posts)Made with ginger, garlic, green onion, and fish sauce. I glazed them with orange marmalade spiked with vinegar and soy sauce, and served them with rice and a cucumber salad.

(2,302 posts)Today I started the low FODMAP diet, in an attempt to figure out my digestive problem. You begin by eliminating anything that can cause fermentation in your digestive system, and sadly that includes onions and garlic (a lot of fructose is a no-no)! assuming the problem goes away, you can then try adding stuff back in.
I got lactose-free half & half, and non-dairy yogurt...and popsicles made with sugar(sucrose) for later.
So I made my fish without onions and used diced red pepper instead - it was still good. Sauteed zucchini slices with just salt, pepper, and paprika. Leftover rice for Hubby.
