Stuffed cherry tomatoes for an appetizer. The stuffing is cream cheese, mayo, cucumber, onion, and dill.
Indian red lentil soup. Has turmeric, cumin, chili powder, and cilantro as seasonings. It calls for spinach, but I'm using Swiss chard because I picked some from my garden. Soup is served cold.
Roast beef "sandwich" with horseradish cream sauce. My "bread" is a whole grain flatbread, low-carb.
Dessert will be the same thing as last night: strawberries and no-sugar vanilla ice cream, along with some coconut milk, whirled in the blender.
To drink: Mike's hard lemonade.

Chicken Parmigiana with red sauce (of course) and topped with melted mozzarella. I picked up a fresh loaf of bread on the way home. We have some Ruffino Chianti left, I hope.
Sliced pears for dessert.

Is Ruffino a good Chianti? I only drink occasionally, and am fussy especially about reds; do recall having good Chianti ages ago, but have none around now. SMOOTH is important to me.
We bought a bunch of heirlooms at the farmers' market this past Sunday. They are so much better than hot house tomatoes.
My fiancee is growing red and yellow cherry tomatoes and they're yummy-- almost like candy-- but not quite right for my salad. (I'm picky!)
The Chianti is pretty good, full-bodied with a rich flavor. A local liquor store was going out of business and the owner offered us her last two cases at her cost. We've been working through the boxes the past couple of months!
Your appetizer sounds delicious. Dessert sounds just as great.
