What's for Dinner, Thurs, 3/17/16, St. Patrick's Day

Will you be having corned beef and cabbage tonight?

Not me. I had a chance to last night, though, but decided not to because the sodium content of corned beef is so high. We went to an Irish pub last night to enjoy a little St. Patrick's Day.

Tonight I'm refining my orange chicken/broccoli recipe. I have tried this over the past week or so and now I'm going to make it a little differently. This time I am adding tangerine slices and toasted cashews.

I made cabbage last week so I'm not up for that again. And I've been feeling a bit under the weather. I did make it to the market yesterday but when I went to put things in the fridge, I realized how much food we have in leftovers. Even though we normally have leftovers on Friday, I'm on strike, so that's what's for dinner.

My husband looked up a corned beef recipe and was shocked to find he needed at least 17 hours for brining. I don't even like it that much and I reminded him it IS high in sodium and... we are not.

so I made asparagus, carrots, squash, green beans, spinach, chicken broth soup in my blender. Needs a little spice.

Lamb stew or shepherd's pie is a more appropriate St. Patrick's Day dinner.

I'm having my famous Irish Lamb Stew cooked with Guinness. And I made Irish soda bread which was outstanding! What a hearty meal! And we have a ton of leftovers, which is a good thing.
