an oldie but goodie. I made some for a family birthday gathering and got great reviews. It's the brown butter that adds that extra flavor.
Found online everywhere, lol.
Banana Bread Bars Total Time: 40 mins; 15 Servings
Bars
1 1?2 cups sugar
1 cup sour cream
1?2 cup butter, softened
2 eggs
3 -4 bananas, mashed
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
3?4 teaspoon salt
1?2 cup walnuts, chopped (optional)
Frosting
1?2 cup butter
4 cups powdered sugar
1 1?2 teaspoons vanilla extract
3 tablespoons milk
Directions
1. Heat oven to 375°F Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.
4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).
I ended up adding a little more milk to thin the frosting a bit and I had a little frosting leftover.

(2,674 posts)Right now I have some bananas that are starting to get too ripe. Usually make a banana cake, but this recipe reads like something my family will like. I have all the ingredients including sour cream. Being in Texas, I will use pecans instead of walnuts, have some pecans already shelled and they need to be used too.
Let you know how this recipe is received by my foodie family.

Because of the frosting, these bars are very sweet compared to plain banana bread. But they are less dense. I hope your family likes them!

(25,815 posts)I broiled the bananas in the oven first. Took more bananas than I thought to reach one and a half cups for my recipe, but the flavor was more intense. I'm going to do that from now on. Sour cream seems to add a little extra and I always use it too.

(2,674 posts)It was so easy. I used cream top yogurt instead of the sour cream and my 4 bananas were perfect, yellow with brown spots, nice and sweet, but not too ripe.
I put on a lemon powder-sugar glaze - 2 cups powder sugar, 1/4 cup butter, juice of 2 lemons. Just a little tart, to cut the sweetness of the banana bars.
The old boy put his seal of approval on the recipe too, he ate two pieces.

(16,334 posts)I wish I had thought to use yogurt AND the lemon glaze. I always have yogurt. I had to go buy the sour cream.
Oh well, I will modify the next batch. Great ideas!
