I made an apple kuchen using the hardest, smallest, green apples that I'd ever seen. The old boy got them at Fiesta market. I was worried that the cake would not turn out using these apples, but in fact it ended up being the best apple kuchen I'd ever baked. I have used all kinds of apples when making this cake, but these little green apples were the best ever. As soon as I put it in the oven, the juice started coming out of the apples. They were tart enough that I didn't use any lemon juice. I am sending the old boy back to Fiesta to get some more of the apples before they are gone.
I was on a cooking roll, so I decided to make Cinnamon Buttermilk ice cream to go with the apple kuchen. It was a match made in food heaven. So good! If you are in the cooking mood, give these two recipes a try. Both recipes are so simple. I have included pics I took a few years back of the apple kuchen.

Apple Kuchen Cake This recipe is from 1960's edition of The Joy of Cooking.

Cake Batter Ingredients:
1 cup flour
2 teaspoons baking powder
½ teaspoon salt
¼ cup sugar
¼ cup butter (½ a stick)
1 egg, beaten
1 teaspoon vanilla
Milk
Apple Topping ingredients
5 or 6 small tart apples, peeled, cored, seeded and sliced thin
3/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 tablespoon butter, melted
Juice of ½ lemon or lime
To make the cake:
Sift flour, baking powder, salt and sugar together. Using fingers work the butter into the flour mixture until it resembles corn meal.
Use beaten egg, vanilla and enough milk to make ½ cup liquid. Stir into flour mixture. Batter will be thick and sticky. Butter your baking dish. Use a 8 square, 9 x 12 rectangular or a 10 round dish. Spread cake batter in dish.
Arrange the apple slices on the dough, crowding to get as many apple slices as possible pushed into the cake batter. Mix sugar and cinnamon and spoon over the apples. Spoon the melted butter over the sugar and then spoon the lemon or lime juice over all. If apples are tart, probably won't need the lemon juice.
Bake in 350 degree oven for 25 to 30 minutes. If apples don't give up their juice, lay foil over top, lower heat to 300 degrees and bake for 5 to 10 minutes more.
Let cool before slicing. Ice cream is good or try this topping Mexican Crema mixed with a little sugar and vanilla. Put a few spoons of this mixture over the slice of cake.

Cinnamon Buttermilk Ice Cream
Mix in large bowl:
1 cup sugar
½ teaspoon salt
2 teaspoons cinnamon
2 teaspoons vanilla
2 cups buttermilk
2 cups whipping cream
Stir until sugar is dissolved. Cover bowl and chill in refrigerator until ready to make ice cream.
To make ice cream, pour mixture in frozen tub of ice cream maker. Place tub on ice cream maker stand, add dasher, then place cover on top. Process according to instructions, usually takes 15 to 20 minutes.
