Pot Roast leftovers

Ok, my pot roast came out perfectly yesterday, if I do say so myself. It was falling apart and absolutely delicious.

Now I have some leftovers, as well as leftover potatoes, carrots and broth.

What would you do with them?

used to mash it all together and make sandwiches with it. Could maybe do a Shepherds pie type of casserole and freeze for later.

My husband is from the UK and loves it when I make something he remembers from home. What a great idea.

I make homemade breaded chicken fingers, then just use packaged salad greens and ranch dressing and wrap it all up. Soooooo delicious, easy and economical.

and eat it. i LOVE leftovers. many meals i make last 3 days or more. saves time. and economical. and many times day 2 or 3 it's better.
hmm, i need to make my aunt's beef stew soon. 4 day pot of ymmy. wine+ fr OJ etc etc...

I make hot beef sandwiches with the leftovers, as I usually have a lot of gravy.

I grilled my fresh homemade bread - thick Texas style crispy. Put on the roast, pour over the gravy, openface.

Pie dough wrapped around chopped leftovers (be sure there's some gravy inside to moisten them) and baked. More gravy over the top. No gravy if carrying the pasty in a tin lunch box down to work in the coal mine.

add more taters and carrots or whatever and if we're already over it, i just throw it in the freezer for a quick meal a few weeks down the road
