Ok, my pot roast came out perfectly yesterday, if I do say so myself. It was falling apart and absolutely delicious.
Now I have some leftovers, as well as leftover potatoes, carrots and broth.
What would you do with them?

(16,020 posts)used to mash it all together and make sandwiches with it. Could maybe do a Shepherds pie type of casserole and freeze for later.

Thanks!

(45,358 posts)I make homemade breaded chicken fingers, then just use packaged salad greens and ranch dressing and wrap it all up. Soooooo delicious, easy and economical.

(24,096 posts)I make hot beef sandwiches with the leftovers, as I usually have a lot of gravy.
I grilled my fresh homemade bread - thick Texas style crispy. Put on the roast, pour over the gravy, openface.

(50,130 posts)Pie dough wrapped around chopped leftovers (be sure there's some gravy inside to moisten them) and baked. More gravy over the top. No gravy if carrying the pasty in a tin lunch box down to work in the coal mine.
