Still working on adjusting how much meat we cook at any given time to avoid all the leftovers.

(39,961 posts)It has been so cold, that I've been eating a LOT of Red Beans & Rice. I really enjoy it, though, and a big pot means leftovers can be taken along to work for lunch and it's good for a quick, hearty dinner, too.

(2,016 posts)I have a leftover pork chop, which I'll throw into a veggie stir fry, then toss that all atop some ramen noodles.

(50,130 posts)I cube it up, sprinkle a bit of soy sauce on it, and stir fry it with veggies, and with al dente drained ramen noodles mixed right into the fry. The ramen powder adds some zing to the stir fry, too. Bell pepper, onion, sugar snap peas from the freezer, cabbage, edamame if I have some, bean sprouts if I have planned ahead to buy them. Only one store in my locale carries fresh bean sprouts; others worry about bacterial contamination and won't stock them. Fresh ginger and garlic.
I think that's on the menu this week.

Just curious - it's been a while since I've had oysters. And Costco always seems to have really fresh seafood.

(2,016 posts)I'm not Polish, but in my hometown we had a Polish enclave, and the church in that part always had a festival - and the Catholic nuns would make pirogies (and other fare) until they dropped. It was a fund-raising thing. But my best memories were of the cabbage/kraut pirogies. They were the best... Pan-seared in butter, with lots of cracked pepper. Yum!

(22,702 posts)The mushroom ones are my favorite. A friend of mine started putting them on the BBQ and they turn out great. Very crispy and full of flavor.

(24,146 posts)gonna stick 'em under the broiler with garlic parm mashed and frozen peas on the side. i'm wiped and don't feel much like cooking, but it's a pretty meal.

(50,130 posts).....with an apricot jam glaze braise. Polenta (we like to add orange zest, butter, rosemary and grated parm to it). Some roasted root vegetables: beets, purple potatoes; parsnips, shallots. Crumbled coconut macaroons with chocolate drizzle for those who need something sweet.
