line a baking sheet with tinfoil and place the Tomatillas cut side down and put them under a broiler for 8 to 10 min.

when they cool enough to handle, throw them in a food processor along with

One small white onion quarterd

One bunch of Cilantro, stems cut off

One of more chopped Jalapeno

one tsp salt.

Process till you're happy.

eat.

Quick, easy and everybody I've served it to raves about it. This from Tucson where salsa is held to very high standards.

I don't bother cooking any of mine, but roasting the tomatillos and the jalepenos would be good too.

I use that same recipe (although mine includes garlic and cumin) but boiled the tomatillos. Will definitely try roasting them next time.

peel (the husk) and wash the tomatillos (say three to a jalapeno?), de-stem and seed the jalapenos (or not) and throw everything in the blender. salt to taste.

I'm eating some heavenly salsa verde with chips! Went to a party to watch college football, and brought it along, using one of the recipes on allrecipes.com that was linked to. Freaking awesome when I used lime juice .

I made about a quart of it, and there was barely any left.

I really liked it. Loved it, actually. But it's the only time I've tried salsa verde so not sure if you should take my word for it, LOL.
